Breakfast Pinwheels (Two Ways!)

I like to keep this simple recipe in my back pocket for an fun and tasty breakfast that I can make in minutes!

Here's a recipe for a sweet and savory breakfast pinwheel,

Ingredients:

  • Pita or Lavash bread (a soft middle eastern flat bread)
  • Spinach
  • Hummus
  • 1 Ripe Banana 
  • Nuts and Dried Fruit
  • PB2 or Nut Spread

Instructions:

Savory Pinwheel-

  1. Cut lavash bread in half, and spread hummus evenly on bread.
  2. Top with spinach leaves 
  3. Roll tightly (similar to a sushi roll)
  4. Cut into pinwheels, and enjoy! 

 

Sweet Pinwheel-

  1. Cut lavash bread in half, and spread PB2 evenly on bread.
  2. Slice banana into small circles, and layer them into two rows on lavash.
  3. Sprinkle with nut and fruit mixture.
  4. Roll tightly (similar to a sushi roll)
  5. Cut into pinwheels, and enjoy!

This recipe is perfect to personalize, or to "use what's in your refrigerator". For instance, you can replace the savory spread with vegan cream cheese/Guacamole, or switch the spinach with your favorite leafy green! You can even add more veggies to bulk up the meal. For the sweet pinwheel you can change the banana for berries, or add hemp and chia seeds for a nutrition boost! 

As much as I love this as a breakfast recipe it works great any time during the day! It's also a fun meal for the kiddos to make!
